Spicey Chicken Salad (Laab Gai) PDF Print E-mail

  • 500 gm Minced chicken
  • 4 tblsp Uncooked rice, baked in the oven and ground fine
  • 2 tblsp Chopped shallots
  • 3 tblsp Fish sauce
  • 4 tblsp Lemon juice
  • 1 tblsp Dried red chili, chopped fine
  • 3 tblsp Chopped fresh coriander leaves
  • 1/2 tsp Sugar
  • 3 tblsp Chopped mint leaves

Cook the minced chicken in a non-stick pan without oil (dry fry).

Put the cooked chicken in a bowl and mix in the other ingredients, except the mint. Mix well and check seasoning and lemon juice.

Sprinkle on the mint leaves before serving.
